Before Miss Phoenix, there was Miss Essie. Poor Miss Essie cracked in various places during her bisque firing. Miss Phoenix rose from Miss Essie’s ashes. She has various spots for different occasions. She sits outside the school at breaktime and lunchtime. On Friday afternoon she sets up her business outside the Estate pay office and on Saturday she sits at the roadside. The schoolchildren like tamarind balls, plantain chips, boiled channa, phulourie with mango sour, egg balls and pastries. On Friday afternoon she has souse and black pudding and on Saturday she sells all of these things. She does brisk business and sells out very quickly.
